Three years after its launch, Ferments du Futur has become a recognised key player in the field of fermentation in France and across Europe.

Between 2023 and 2025, €10 million was invested in state-of-the-art equipment at the innovation centre (CI2F) and partner research units. This first phase has produced particularly encouraging results, the details of which will be published at the start of 2027.

Building on this success, the program has gained new momentum with the renewal of its funding by the ANR as part of France 2030. An additional budget of 20 million euros has been allocated to the second phase of the project (2026–2028).

Of this funding, 5 million euros will be invested to further equip the CI2F and the laboratories of the distributed platform, in line with three strategic priorities designed to drive progress in the field:

• The automation and digitalisation of food processing.
• Solid-state fermentation, a technology that is still relatively underdeveloped in Europe but offers numerous advantages in terms of innovation and sustainability.
• The optimisation of post-fermentation stages required to purify or preserve products.

This new dynamic is also reflected in the arrival of seven new members in 2026, further strengthening the Ferments du Futur ecosystem.
